First, you will need to melt the coconut oil in the microwave. I started with 30 seconds – checked in – and then heated it for another 20 seconds. 

Start by melting 1/4 cup coconut oil in the microwave or on the stove. I started with 30 seconds – checked in – and then heated it for another 20 seconds. 

Then combine cream cheese, coconut oil, erythritol, and vanilla in a large bowl using a hand mixer or, if you’re feeling fancy – use a stand mixer. 

Put the mixture into a fat bomb mold or an ice cube tray mold or a mini muffin tin or if you have none of those items – scoop little balls out onto a cookie sheet and freeze for 45 minutes – 1 hour.
