- 2 Tablespoons Cocoa Powder
- 1–2 Cups Peanut Butter
- 2 Cups Unsweetened Flaked Coconut
- 1 Teaspoon Vanilla Extract (Optional)
- 1/2 Teaspoon Sukrin Gold or Erythritol (Optional)
Instructions
- Mix peanut butter, coconut and cocoa powder together in a large bowl.
- Add in 1 Teaspoon Vanilla and 1/2 Teaspoon Sukrin Gold or Erythritol (Optional)
- Using a cookie scoop or a teaspoon, drop 12 cookies onto a parchment paper lined cookie sheet
- Freeze for 25-30 minutes
