Ingredients
5 eggs, separated
4 tablespoons coconut flour
1 teaspoon baking powder
2 tablespoons granulated Monk Fruit (use less or more – depending on your taste)
½ cup butter, melted
2 teaspoons vanilla
3 tablespoons heavy cream
Instructions
Preheat your waffle iron and grease it with butter or cooking spray. Grab two mixing bowls and get ready to get your waffle on.
The first step is to separate the egg yolks from the whites.
You’ll be tempted to skip it, but don’t.
Whisk the egg whites like your life depends on it – until they get bubbly and form “stiff peaks,” which makes them look like a whipped cream dollop. We’re going through this trouble to make the texture of the waffle as close to the legit version as possible. You can use a whisk, an electric mixer, or a stand mixer to make this stir crazy action happen.
Meanwhile, in bowl #2, you’re going to mix up the egg yolks, coconut flour, baking powder, and sweetener. Stir in melted butter, vanilla, and heavy cream.
Fold in the egg whites.
Add the batter to your waffle iron and cook until your waffles look so golden and perfect that you cannot take it anymore!

Notes
Try Lakanto Sugar-Free Maple syrup if you haven’t already. In my opinion, it is the most realistic tasting of the sugar-free options available.
To Freeze: Make a double batch and freeze these suckers for up to 4 months. Just let them cool off, then freeze in ziplock bags – separate each one with wax or parchment paper, so they don’t stick together. Reheat them in the oven, toaster or microwave.
