Description

These Keto Breakfast Muffins with Sausage are the perfect low carb, high protein breakfast muffin! These easy keto sausage egg cups come together in minutes & make the perfect make ahead, on the go low carb breakfast! Delicious sausage, eggs, cream cheese, cheddar, crisp bell peppers, and green onions come together to create a savory on the go keto breakfast or snack! 


Ingredients

10 Eggs

1/2 Pound Browned Ground Sausage

1/2 Cup Sharp Grated Cheddar Cheese

1/3 Cup Softened Cream Cheese

1/2 Cup Chopped Green Onions

1/2 Cup Chopped Green or Red Bell Pepper 

Salt & Pepper To Taste


Instructions

  1. Preheat Oven to 400 
  2. Line your muffin tin with silicone liners or use cooking spray. (If you’re freezing for later the silicone liners will come in handy & make life a little easier:) I love these-available on Amazon! 
  3. First, brown the sausage over medium-high heat on the stove. Don’t forget to drain the fat! 
  4. Rinse & chop Green (or Red) Bell Pepper
  5. Using an electronic mixer, beat eggs & cream cheese until smooth. Then fold in the rest of the ingredients.
  6. Fill muffin cups to 1/2 – 2/3 full & bake at 400 for 10 minutes. 

Notes

To Freeze: Allow the muffins to completely cool, then wrap each one with cling wrap & place in a labeled ziplock freezer bag. (Make sure you write the date & heating instructions! 

Substitutions

Swap Ground Sausage for Ground Chicken or Turkey

Swap Sharp Cheddar for Mild 

Add Spinach or Your Favorite Low Carb Veggie
