Description
This healthy Moroccan Lentil Sweet Potato Soup recipe is a delicious and hearty crockpot or stovetop recipe that requires only ten minutes of prep! (Vegan, Vegetarian, Plant-Based, Gluten-Free)
Ingredients
- 1 Pound Sweet Potatoes (Peeled and Cubed)
- 1.5 Cups Lentils
- 7 Cups Vegetable Broth (Low Sodium)
- 2.5 Cups Chopped Spinach
- 1 Cup Chopped Onion
- 1 Cup Chopped Carrots
- 1 Cup Chopped Celery
- 1 Cup Chopped Red Bell or Green Pepper
- 8 Cloves Minced Garlic
- 2 Tablespoons Harissa Paste (Optional – For Spicy Soup)
- 1.5 Teaspoons Coriander
- 1.5 Teaspoons Cumin
- 1.5 Teaspoons Curry Powder
- ½ Teaspoon Smoked Paprika
- ½ Teaspoon Turmeric
- ½ Teaspoons Ground Cinnamon
- ¼ Teaspoon Nutmeg
- 2 Tablespoons Olive Oil
- Cilantro (Optional Topping)
Instructions
For the Stove: Heat Olive oil in a large pan and saute onions and carrots until onions are transparent. This should take you less than 5 minutes. Next, add garlic, and spices. Saute for another two minutes.
Add broth, sweet potatoes, and lentils and bring to a boil. Then reduce heat, cover and simmer on low for about 30 minutes.
For the crockpot version: You can add everything to your crockpot and set it on low for 6-8 hours. If you have time to saute the onions and carrots, go for it. Otherwise, feel free to skip it. Slow cooker recipes that involve saute work make me angry:)
