Please let me introduce you to a most delicious and nutritious plant-based Moroccan Lentil Sweet Potato soup recipe. Yes, the ingredient list may be on the long side, but the prep work is super simple. This healthy slow cooker recipe is full of lentils that bring the filling protein, Sweet potatoes that bring the flavor, texture, and vitamins and a host of assorted vegetables that make this vegan meal so robust you will not miss the meat.

Make with Simple Ingredients

You won’t need any special equipment – except for your crockpot – to make this healthy soup recipe.

Sweet Potatoes (Peeled and Cubed)
Lentils
Chicken or Vegetable Broth (Low Sodium)
Spinach
Onion
Carrots
Celery
Red Bell or Green Pepper
Minced Garlic
Spices: Coriander, Cumin, Curry Powder, Smoked Paprika, Turmeric, Ground Cinnamon, Nutmeg, and Harissa paste (which is optional – if you like spicy – go for it!)

How To Make Moroccan Lentil Sweet Potato Soup

You can make Moroccan Lentil Sweet Potato soup on the stovetop or in the slow cooker.

For the Stove: Heat Olive oil in a large pan and saute onions and carrots until onions are transparent. This should take you less than 5 minutes. Next, add garlic, ginger, and spices. Saute for another two minutes.

Add broth, sweet potatoes, and lentils and bring to a boil. Then reduce heat, cover and simmer on low for about 30 minutes.

For the crockpot version: You can add everything to your crockpot and set it on low for 6-8 hours. If you have time to saute the onions and carrots, go for it. Otherwise, feel free to skip it. Slow cooker recipes that involve saute work make me angry:)

This healthy Moroccan Lentil Sweet Potato Soup recipe is a delicious and hearty crockpot or stovetop recipe that requires only ten minutes of prep! (Vegan, Vegetarian, Plant-Based, Gluten-Free) 


Ingredients

Scale
  • 1 Pound Sweet Potatoes (Peeled and Cubed) 
  • 1.5 Cups Lentils 
  • 7 Cups Vegetable Broth (Low Sodium) 
  • 2.5 Cups Chopped Spinach
  • 1 Cup Chopped Onion
  • 1 Cup Chopped Carrots 
  • 1 Cup Chopped Celery 
  • 1 Cup Chopped Red Bell or Green Pepper 
  • 8 Cloves Minced Garlic 
  • 2 Tablespoons Harissa Paste (Optional – For Spicy Soup) 
  • 1.5 Teaspoons Coriander 
  • 1.5 Teaspoons Cumin 
  • 1.5 Teaspoons Curry Powder
  • ½ Teaspoon Smoked Paprika
  • ½ Teaspoon Turmeric
  • ½ Teaspoons Ground Cinnamon 
  • ¼ Teaspoon Nutmeg 
  • 2 Tablespoons Olive Oil
  • Cilantro (Optional Topping) 

Instructions

For the Stove: Heat Olive oil in a large pan and saute onions and carrots until onions are transparent. This should take you less than 5 minutes. Next, add garlic, and spices. Saute for another two minutes. 

Add broth, sweet potatoes, and lentils and bring to a boil. Then reduce heat, cover and simmer on low for about 30 minutes.

    These flavors sound amazing! Do you know if I can use an instant pot / pressure cooker. If so, how long should I pressure cook?

    Hi. I am actually cooking this now. In the receipt it says add “ginger” however there isn’t a measurement for how much ginger?

      Hey Jamie! Thank you for pointing that out – I must have added the ginger in my mind, because I checked my recipe notes & there is NO GINGER! (But it wouldn’t hurt to add a half of a teaspoon…..) I am going to take it out of the recipe online – Hope this did not cause you too much aggravation!!!!
