Lentils
Chicken or Vegetable Broth (Low Sodium)
Spinach
Onion
Carrots
Celery
Red Bell or Green Pepper
Minced Garlic
Spices: Coriander, Cumin, Curry Powder, Smoked Paprika, Turmeric, Ground Cinnamon, Nutmeg, and Harissa paste (which is optional – if you like spicy – go for it!)
How To Make Moroccan Lentil Sweet Potato Soup
You can make Moroccan Lentil Sweet Potato soup on the stovetop or in the slow cooker.
For the Stove: Heat Olive oil in a large pan and saute onions and carrots until onions are transparent. This should take you less than 5 minutes. Next, add garlic, ginger, and spices. Saute for another two minutes.
Add broth, sweet potatoes, and lentils and bring to a boil. Then reduce heat, cover and simmer on low for about 30 minutes.
For the crockpot version: You can add everything to your crockpot and set it on low for 6-8 hours. If you have time to saute the onions and carrots, go for it. Otherwise, feel free to skip it. Slow cooker recipes that involve saute work make me angry:)

- 1 Cup Chopped Onion
- 1 Cup Chopped Carrots
- 1 Cup Chopped Celery
- 1 Cup Chopped Red Bell or Green Pepper
- 8 Cloves Minced Garlic
- 2 Tablespoons Harissa Paste (Optional – For Spicy Soup)
- 1.5 Teaspoons Coriander
- 1.5 Teaspoons Cumin
- 1.5 Teaspoons Curry Powder
- ½ Teaspoon Smoked Paprika
- ½ Teaspoon Turmeric

Hey Jamie! Thank you for pointing that out – I must have added the ginger in my mind, because I checked my recipe notes & there is NO GINGER! (But it wouldn’t hurt to add a half of a teaspoon…..) I am going to take it out of the recipe online – Hope this did not cause you too much aggravation!!!!
