Description

This slow-cooking Cilantro Lime Chicken crockpot recipe is everything you want in an easy dinner.  Fabulously seasoned, five-star restaurant-quality flavor meets a 10 minute prep time in a healthy, low carb, keto-friendly, and Whole30 approved meal. 


Ingredients

Scale
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 4 cloves garlic, peeled and smashed
  • 1 jalapeno, seeded and chopped; see notes
  • 12 tsp Kosher salt or Sea salt 
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp cracked black pepper
  • 2 lb boneless skinless chicken breasts
  • 1/2 cup chopped cilantro

Instructions

  1. Place the chicken broth, olive oil, lime juice, garlic, jalapeno, salt, cumin, paprika, and pepper into a food processor. Blend until all ingredients have transformed into a delightful well-mixed sauce.
  2. Place the chicken in a single layer in the crockpot. Pour the sauce over the chicken. 
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. Using a fork, shred the chicken. Then add the cilantro to the chicken, and stir. Serve immediately (see post notes for serving suggestions). Store any leftovers in a tightly sealed container in the fridge for a week or in the freezer for up to 3 months.
