Instructions

Start by melting the coconut oil in your mug or ramekin. That’ll take you anywhere between 35-45 seconds, depending on how strong your microwave is:)

Next, stir in the vanilla. 

Then go ahead and add the almond flour, erythritol, baking powder, salt, and egg. Do your best to mix it up – remember your mood later may depend on your stirring skills. 

Now, pop it into the microwave for 1 minute, 30 seconds. 

Boom. You have cake now. 

Top with keto whipped cream, cream cheese frosting,  strawberries or blueberries, or a little powdered erythritol or nothing because damn, you need cake.
