Description

This keto taco soup is divine! Ground beef, cream cheese, onion, and Mexican seasonings combine to create an easy keto dinner recipe you can make in your crockpot or slow cooker! With only 3.5 net carbs and 3 WW SmartPoints per serving! 

 


Ingredients

1 Pound Ground Beef or Turkey 

1/2 Small Onion – Diced

1 8 Oz Block of Cream Cheese 

4 Garlic Cloves – Minced

4 Cups Beef Broth (Bone Broth Recommended)

2 14 Oz Cans Rotel Tomatoes or Diced (Do Not Drain)

4 Oz Green Chiles

2 -3 Tablespoons Homemade Taco Seasoning


Instructions

  • Dice Onion 
  • Brown Ground Beef & Onions over medium-high heat until browned
  • Add in Dry Ingredients 
  • Add in Minced Garlic & cook another 1-2 minutes
  • Drain Fat (If Needed) 

Stovetop: Add in beef broth & Rotel Tomatoes (Do Not Drain) Simmer for 5 Minutes. Add Cream Cheese & stir. Cook another 5 Minutes! You’re Done! 

Crockpot: You CAN put the raw ground beef in the crockpot-just be sure to crumble first. Then add in the rest of the ingredients & cook on low for 4-6 hours. (You can also brown the ground beef with the onions prior to loading into the crockpot!)

Top with sour cream, avocado slices, Jalapeños & Shredded Cheese
