Ingredients
1 cup butter, room temperature
¾ cup Monk Fruit Classic erythritol sugar
4 ounces cream cheese, softened
2 eggs
2 cups almond flour
½ cup coconut flour
1 teaspoon vanilla
1 teaspoon xanthan gum
Instructions
Using a hand mixer or stand, cream the 1 cup of butter with ¾ cup of sweetener. Add the softened cream cheese, 2 eggs, and the 1 teaspoon vanilla. Slowly stir in the 2 cups of almond flour, followed by the ½ cup of coconut flour. Finally, stir in the 1 teaspoon of xanthan gum and the chocolate chips, if using.
Combine all ingredients well, and form the dough into a ball.
Refrigerate overnight or at least four hours for best results.
Bake at 350 for 10-12 minutes. Allow the cookies to cook thoroughly – it makes a huge difference. Cool for 15 minutes on the cookie sheet, then transfer to a rack to cool completely.
