Tips for Baking the Best Cream Cheese Keto Cookies 

Use Room-Temperature Ingredients: Ensure your eggs, butter, and cream or almond milk are at room temperature, unless otherwise specified in the recipe. If you use them straight out of the fridge, cold, your batter will clump up.

Softening Butter Tip: If you’ve forgotten to soften the butter, you can soften it in 2 minutes by slicing it into chunks and using the paddle attachment on your stand mixer, or try softening it in the microwave in 5-second intervals. 

Line Your Cookie sheet pan with Parchment Paper: You won’t have to worry about the cookies sticking to the tray (Bonus: You can reuse parchment paper) 

Use a Cookie Scoop: If you want your cookies to be uniform in size, look great on a dessert tray or give your hands a break.

Keep Your Eyes On the Prize: Almond flour cookies and other treats get toasted – also known as burned – very quickly. Keep an eye on your bread or cake, and if the sides appear to be browning too quickly, cover the top with aluminum foil to prevent a total disaster.

Then, place the cookie dough balls in a zip-lock freezer bag labeled with the recipe name, baking temperature, and heating instructions. You should add a minute or two to the baking time, as you’re working with frozen dough.

Ingredients

Scale

1 cup butter, room temperature

¾ cup Monk Fruit Classic erythritol sugar

4 ounces cream cheese, softened

2 eggs

2 cups almond flour

½ cup coconut flour

1 teaspoon vanilla

1 teaspoon xanthan gum


Instructions

Using a hand mixer or stand, cream the 1 cup of butter with ¾ cup of sweetener. Add the softened cream cheese, 2 eggs, and the 1 teaspoon vanilla. Slowly stir in the 2 cups of almond flour, followed by the ½ cup of coconut flour. Finally, stir in the 1 teaspoon of xanthan gum and the chocolate chips, if using.

Combine all ingredients well, and form the dough into a ball.

Refrigerate overnight or at least four hours for best results.

Bake at 350 for 10-12 minutes. Allow the cookies to cook thoroughly – it makes a huge difference. Cool for 15 minutes on the cookie sheet, then transfer to a rack to cool completely.
