Look, I’m going to tell you about these keto pinwheels, but first let me paint you a picture:
It’s 3 PM. Na just finished his homeschool work (miracle). I haven’t eaten since coffee at 7 AM because who has time? And I’m standing in my kitchen wondering how other moms make those Pinterest-perfect bento boxes while I’m over here calling cream cheese a vegetable.
Enter these ham and cheese roll-ups. Or as I call them: “Roll It Up My Homeboy Pinwheels” because if I don’t amuse myself, who will? Also, I named all of the recipes in my book, Rebel Keto, after 80’s songs – because I’m extra.

Why These Pinwheels Are Actually Genius
Pattern recognition moment: You know what the diet industry doesn’t want you to know? That keto can be stupid simple. No macro counting. No food scales. Just ham, cream cheese, pickles, and the audacity to call it cooking.
These take 15 minutes to make and 2 hours to chill. Which means you can make them during that weird afternoon slump, forget about them, and then at 5 PM when everyone’s asking about dinner, you pull these bad boys out like you planned it all along.
Mother of the Year? No. Mother who fed everyone? Yes.
The Actual Recipe (Because You Came Here for Food, Not My Feelings)
Ham & Cheese Pinwheels
Prep Time: 15 minutes
Chill Time: 2 hours
Total Time: 2 hours, 15 minutes
Yield: 24 pinwheels (or 1 stressed mom’s sanity)
Ingredients
- 1 (8-ounce) package cream cheese, softened
- ¼ pound Genoa salami (about 8-10 slices)
- 1 tablespoon prepared horseradish (trust me on this)
- 7 slices of ham (the good stuff from the deli, not the sadness in plastic)
- 7 dill pickle spears (MUST be dill. This isn’t amateur hour)

Instructions
- Blend that cream cheese mixture:Â In a food processor, blend cream cheese, salami, and horseradish. Process for about 2 minutes until smooth. Yes, we’re putting salami IN the cream cheese. Stay with me.
- Assembly time:Â Arrange ham slices on a pan and equally distribute the cream cheese mixture on each. Pretend you’re fancy. You’re not. That’s okay.
- Roll it up, my homeboy:Â Place a dill pickle spear in the center of each piece of ham and roll tightly. Like you’re rolling up all your problems to deal with later.
- The waiting game:Â Wrap in plastic wrap and refrigerate for 2-3 hours. Or overnight. Or three days because you forgot. They’re very forgiving.
- Slice and serve:Â Cut into 1-inch bites and serve. Watch people lose their minds over something that took you 15 minutes.

The Pattern Recognition Part
Here’s what I’ve learned after 150 pounds lost: The foods that save you are rarely the ones in those gorgeous food blog photos. They’re the ones you can make when you’re exhausted. When you’re broke. When you’ve got 15 minutes between homeschool meltdowns.
These pinwheels? They’re:
- Meal prep gold (make Sunday, eat all week)
- Lunchbox heroes (if your kid actually goes to school)
- Party pleasers (bring to potlucks, accept compliments)
- Depression meal champions (minimal effort, maximum nutrition)
- Budget-friendly (under $10 for 24 pinwheels)
The Part Where I Keep It Real
Some days you’ll make elaborate keto meals. Some days you’ll roll ham around pickles and call it gourmet. Both are winning.
The diet industry wants you to think weight loss requires suffering, complicated recipes, and foods that taste like cardboard. Meanwhile, I’m over here eating what is essentially adult Lunchables and down 150 pounds.

Pattern: Spotted. Manipulation: Rejected. Pinwheels: Rolled.
Make These When
- Your in-laws are coming and you need to look like you have your shit together
- It’s Sunday and you need lunch for the week
- You’re going to a party and need to bring something
- You’ve been eating sad desk salads and need joy
- It’s Tuesday
Seriously, just make them. Your future hungry self will thank your current motivated self.
