The three must-have ingredients are natural peanut butter, granulated Swerve, and egg. You may also want to add in a little Vanilla and top these bad boys off with Sea Salt, but nobody’s going to make you:)
Choosing The Right Peanut Butter (On A Low Carb Diet)

You’ll want to select a low in sugar peanut butter – the fewer the ingredients, the better! Natural peanut butter typically contains around 2-4 net carbs per tablespoon. (The total carbs after you subtract the dietary fiber.)

Variations To Customize These Peanut Butter Cookies

In case you get bored or want to try something new for the holidays, I’ll include a few options for you to make these cookies a little extra special.
If you’re feeling nutty, add ½ of a cup of chopped peanuts.
Need to get your chocolate on? Add ½ cup of sugar-free chocolate or white chocolate chips.
Do you know what I used to do to switch these up and make them look fancy without much effort? Melt the chocolate chips in the microwave and drizzle or dip the cookies into the chocolate! (After baking, of course:)
All you have to do is put your chocolate chips in a microwave-safe bowl with two tablespoons of coconut oil. Check-in on it every 15 seconds and stir – it shouldn’t take longer than a minute.
Can You Make These Ahead & Freeze?
Great question! Yes, you can. If you’re planning ahead for a craving or just planning ahead, these cookies will keep in an airtight container for about a week, and they freeze for up to two months.

Fabulously easy and low carb peanut butter cookies using three simple ingredients to create a healthy homemade peanut butter cookie that’s gluten and sugar-free, with 2.1 net carbs and 3 WW SP per serving.
Ingredients
- 1 Cup Natural Peanut Butter or Nut Butter
- ¾ Cup Granulated Erythritol (I use So Nourished)
- 1 Egg
Instructions
- Preheat Oven to 350
- Combine peanut butter, granular Erythritol, and egg in a medium bowl. Or mix it all in a food processor until smooth.
- Spoon out 1 Tablespoon size amounts of dough onto an ungreased cookie sheet. (About an inch apart)
- Flatten each with a fork
- Bake for 10-12 minutes
