Ingredients
10 Eggs
1/2 Pound Browned Ground Sausage
1/2 Cup Sharp Grated Cheddar Cheese
1/3 Cup Softened Cream Cheese
1/2 Cup Chopped Green Onions
1/2 Cup Chopped Green or Red Bell Pepper
Salt & Pepper To Taste
Instructions
- Preheat Oven to 400
- Line your muffin tin with silicone liners or use cooking spray. (If you’re freezing for later the silicone liners will come in handy & make life a little easier:) I love these-available on Amazon!
- First, brown the sausage over medium-high heat on the stove. Don’t forget to drain the fat!
- Rinse & chop Green (or Red) Bell Pepper
- Using an electronic mixer, beat eggs & cream cheese until smooth. Then fold in the rest of the ingredients.
- Fill muffin cups to 1/2 – 2/3 full & bake at 400 for 10 minutes.
Notes
To Freeze: Allow the muffins to completely cool, then wrap each one with cling wrap & place in a labeled ziplock freezer bag. (Make sure you write the date & heating instructions!
