Let me walk you through a typical day on a low carb or keto diet if you skip breakfast. 

Ok, so that may be a little dramatic, but seriously, if you are going to stick to any diet, you better start strong in the AM with a breakfast that will keep you full until lunch. Otherwise, you risk going into hangry mode – and when you get hangry, you may just fall off the keto wagon. 

This keto breakfast sandwich recipe is the breakfast hero you need. Here’s why: 

Eggs: Using eggs as a stand-in for bread will both keep you off of the blood sugar roller coaster and curb cravings, save you the carb count and give you plenty of protein to keep you full. Oh, and big bonus, did you know people that start the day with eggs are more likely to lose weight? 

Avocado: The healthy fats in the avocado will also keep you fat-fueled and keep your heart healthy. 

How Do You Make Low Carb Breakfast Sandwiches Without Bread?

Great question! When I started the keto diet, I thought the only breakfast option was eggs, eggs, and more eggs. The first time I saw a keto breakfast sandwich recipe, I thought I was either seeing a major lie or a magical unicorn that descended from heaven to save me from my morning nightmares. 

It turns out it’s easy to make keto-friendly breakfast sandwiches with no biscuits or bread in sight and with only a few ingredients! All you have to do is swap the bread for egg “muffins” or, if you are so over eggs, use two sausage or turkey patties! 

Boom! You’ve got a portable, handheld breakfast in minutes. Breakfast is ready in about ten minutes and delicious.

Ingredients To Make This Keto Breakfast Sandwich Recipe 

6 large eggs, separated

4 ounces cream cheese, softened 

¼ teaspoon garlic powder

Sea salt and black pepper, to taste

4 slices sharp cheddar cheese

1 large avocado, sliced

½ medium tomato, thinly sliced

12 thick-cut slices bacon, cooked crispy

Ingredients

Scale

6 large eggs, separated

4 ounces cream cheese, softened 

¼ teaspoon garlic powder

Sea salt and black pepper, to taste

4 slices sharp cheddar cheese

1 large avocado, sliced

½ medium tomato, thinly sliced

12 thick-cut slices bacon, cooked crispy


Instructions

1.Preheat the oven to 325ºF and line two large baking sheets with parchment paper or baking mats. Set aside.

2. Fry the bacon and set it aside to cool. 

3.Separate the egg whites and the yolks into two separate bowls. Add the 6 egg whites to the bowl of a stand mixer or a large mixing bowl if using a hand mixer. Mix on high speed until stiff peaks form. Set aside.

4.In a separate mixing bowl, whisk the cream cheese with 4 egg yolks and the garlic powder. (Reserve the remaining egg yolks for another use). Season with salt and black pepper to taste, and stir to combine. Set aside.

5.Working in batches, gently fold the whipped egg whites into the cream cheese mixture with a spatula just until the mixture is thoroughly combined. Do not overwork.

6.Spoon approximately a quarter cup of the mixture on the prepared baking sheets to create 8 circles. Gently spread the mixture into one-half-inch high circles, leaving some space between each ring. (The mounds will spread a bit while baking).

7.Bake until the egg rounds become golden and fully set in the center, approximately 15-20 minutes.

8.Remove from the oven and trim each egg round with the cookie-cutter if desired. Place a slice of cheddar cheese on four of the circles and return to the oven just until the cheese is melted for approximately 2 minutes.

9.Remove the baking sheet from the oven and top each round with cheddar with 2-3 avocado slices, sliced tomato, and one strip of bacon broken in half. Top with the remaining egg rounds and serve immediately with 2 additional strips of crispy bacon on the side. Enjoy!

 

Notes

Optional Tip: Use a 3 or 4” round cookie cutter to trim the egg rounds after baking.

  • Cook Time: 20 minutes

    Tried blueberry muffin cup, almond flour and it is great. But I still get an aftertaste with monk fruit.
