Full disclosure: As much as I would love to take credit for this superfood breakfast smoothie recipe, the truth is I didn’t create it. My nine-year-old daughter, Lylah Kate, came up with the recipe after what I’m guessing was too many mornings without a hot breakfast.
What Are The Best Superfoods For Smoothies?
Superfoods are packed with vitamins, minerals and antioxidants – and this smoothie is loaded with them.
Blueberries: Packed with antioxidants, blueberries are a must-have superfood for smoothies. Kids love the taste and Moms love the potassium and Vitamin C that helps support a healthy immune system.
Strawberries: The major player in a strawberry is Vitamin C – that boosts immunity and promotes healthy eye function.
Pineapple: Pineapple is another heavy hitter loaded with Vitamin C + fiber that supports a healthy digestive system.
Banana: With significant amounts of Vitamin C and B6, bananas bring the nutrition and the potassium – plus they add a fabulous flavor.
Spinach: Spinach is loaded with Vitamin C, Vitamin K, beta-carotene, iron, calcium and magnesium – and it happens to be on most kids top ten most hated vegetables. The beauty of this smoothie is that the fruit masks the “spinach-y taste” kids avoid.
Kale: One 1/2 cup of kale has 100% of your daily dose of Vitamin A, more than 50% of your recommended daily Vitamin C and Vitamin K.
Are Smoothies Good For Kids?
Absolutely – smoothies are a fast and easy breakfast solution for busy mornings that provide vitamins, minerals, and nutrients that kids need to stay well and full until lunchtime.
My daughter loves smoothies, and she has a basic understanding of superfoods – but I don’t think she set out to create a well-balanced breakfast with just enough sugar from the fruit to “sneak” in the spinach and kale. (But that is exactly what happened.)
Can You Make This Superfood Breakfast Smoothie Recipe Ahead?
Making smoothie packs in advance is easy. All you need are a few ziplock bags or mason jars. Layer the fruit, then the spinach and kale and seal. When you’re ready for a smoothie, empty the bag into the blender, add liquid, and press blend!
You can freeze smoothies for up to 3 months – and the process takes all of 5 minutes once you get the hang of it.
