Sometimes you’re in the mood for extra, and sometimes simple is the way to go. Lately, I’ve been all about ease, and this recipe has become a go-to dinner recipe that I can count on. And what can be easier than a 5 -ingredient crockpot dinner recipe (other than winning the lotto and retiring to a private island?)
If you said a dinner you could make easy and fast; you’re in luck because this one is both slow cooker and Instant Pot friendly. So, boom, I got your dinner covered!
Ingredients You Need To Make This Crockpot Steak Fajita Recipe
2 Pounds of Beef, sliced
For the beef, I went with sliced strips of flank steak. If that’s not you’re jam, or you don’t have any on hand, feel free to use sirloin, flat iron steak, or chuck or rump roast.
As far as the veggies are concerned, I typically mix it up with red and green bell peppers, but again, this is up to you. Use whatever color bell pepper you please (or can find at the store or in your fridge!) And as for the onion? I like the flavor of red onion, but sometimes it comes on too strong – so if you’re more of a yellow or white onion fan – go for it!
2 Bell Peppers, sliced + 1 onion, sliced
15 ounces diced tomatoes
2 tablespoons fajita seasoning (store-bought or homemade)
1 tablespoon oil (if you’re going the Instant Pot route)
1/4 cup beef broth or water (if you’re going the Instant Pot route)

A Note About The Fajita Seasoning
Ok, so I know there are some super important debates going down about the benefits of using homemade seasonings versus store-bought. And if you are detecting a little sarcasm here, then you feel me. Look, while it is true that homemade condiments have fewer preservatives and questionable ingredients than store-bought varieties, it is also true that sometimes ain’t nobody got time for DIY-ing their seasonings.
So, you’ll get no Judge Judy action from me no matter which route you choose. But, full disclosure, if you with homemade, this recipe is technically over five ingredients – so know that on the front end – and please do not send me hate mail for lying.
The tea on the homemade version: I bet you have all these in your pantry. And, this makes right around 2.5 tablespoons worth – or the equivalent of one packet of McCormick or insert your favorite brand name here. All you have to do is add the ingredients to a bowl or a mason jar and stir them together.

Serving Ideas

The good news is you have several options for serving these steak fajitas. If you’re following a low carb eating plan: serve over cauliflower rice, in a lettuce cup or wrap, or in an almond flour tortilla. If you’re not watching your carbs, serve over brown rice. I love a lettuce wrap or cup – as long as I’m not wearing a white shirt.
Toppings
Top with sour cream, salsa, shredded cheese, sliced avocados and black olives.

Ingredients
2 pounds beef, sliced

Homemade Fajita Seasoning
1 tablespoon chili powder
1 ½ teaspoons cumin
1 teaspoon pepper
1 teaspoon salt
½ teaspoon paprika
½ teaspoon oregano
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon red pepper flakes
Instructions
Crockpot Instructions
Add all ingredients to your crockpot and stir.
Cook on high for 2-3 hours, or on low for 4-6 hours.
Instant Pot / Pressure Cooker Instructions
Turn on your pressure cooker and select the Sauté setting. Add the oil and the flank steak. Cook for 2-4 minutes or until beef is browned. Remove the beef.
Add the sliced onions and bell peppers. Cook for 3-5 minutes or until vegetables are soft. Next, add the beef broth or water and scrape the bits off the Instant Pot’s bottom with a wooden spoon. Return the beef to the pot and add the diced tomatoes and fajita seasoning. Stir and close the lid – and seal the valve.
Adjust the setting to high pressure and cook for 9 minutes. Release, stir, and serve. And enjoy!
