Nope! Especially when it takes minimal effort, no oven and no ridiculously long chill time!
I know I’ve thrown the term “game-changer” around fairly liberally around here, but this time it is 100% appropriate. See, there was a point in my life where I was straight up addicted to those no-bake oatmeal cookies. You know the ones with the oats, cocoa and peanut butter? Yeah, my grandmother introduced me to those when I was little and I have the fondest memories of burning my mouth on the spoon she used to stir those bad boys on the stove top.
Back then I didn’t know what a carb was and I doubt I would’ve cared my favorite dessert contained 100,000 carbs each. Now, I do.
Now, before I jump into the recipe, let’s (briefly) discuss the elephant in the room peanut butter & the keto diet. If you’ve never given it much thought – a quick google search will show you that there are a lot of folks who have and the final word is: you decide!
Here’s the deal: peanut butter can be a healthy part of your low carb and yes, keto diet, as long as it’s the RIGHT KIND.
Your best bet is to choose a natural peanut butter – without the extra sugar. The fewer the ingredients, the better. Natural peanut butter typically contains around 2-4 net carbs per tablespoon. The total carbs after you subtract the dietary fiber.

How To Make Keto No Bake Cookies
These keto cookies are super easy to put together. Peanut butter, cocoa powder, and coconut are the must-have on hand ingredients. You may also need vanilla, erythritol, or Sukrin Gold.
The first time I made these, I was trying to be fancy, and I used Sukrin Gold (a brown sugar swap) and Vanilla. They were fabulous, but the Sukrin Gold did add a few carbs, and I wasn’t so crazy about that – so, of course, because part of my job is making cookies and eating them – I tried them without the Sukrin Gold the very next night.
Ok fine, I was out, and I needed more cookies.
Guess what? They were just as good!
So how do you make no-bake cookies? Easy. All you need to do is stir your peanut butter, cocoa powder and coconut together in one bowl – and here’s my favorite part – taste it before you add sweetener. You may not need any vanilla, erythritol or Sukrin Gold – so why use it if you don’t have to?
If you feel like you need the cookies to be a little sweeter, go ahead and add in the vanilla first then follow that with your sweetener of choice.
Next step: Grab a cookie sheet and line it with wax paper. Use a cookie scoop or a spoon to drop the batter onto the pan. Then put that pan into the freezer and try to do something to take your mind off of dessert for 25-30 minutes.
Now, there are a couple of drawbacks I have to tell you about – full disclosure.
A) You have to store these in the freezer so you cannot hide them from your family. (Who will eat them and leave the empty pan behind)
B) They aren’t the prettiest cookie in the world, but what matters is on the inside, right?

Here’s the thing – you can customize this recipe all you want! Add in some almonds or pecans or experiment with different sweeteners. Some folks add butter to their no-bakes – try it and see what works for you!
How Many Cookies In A Batch?
These are drop cookies – so the size of your cookie is going to depend on you. To get more than a dozen per batch, use a mini cookie scoop – If you go that route, you could end up with around 18 small cookies. I calculated the nutrition info based on 12 cookies. If you make more than 12, the macros will be a little different.

Ingredients
- 2 Tablespoons Cocoa Powder
- 1–2 Cups Peanut Butter

Instructions
- Mix peanut butter, coconut and cocoa powder together in a large bowl.
