If there’s one recipe that has saved my sanity on busy weeks, it’s this one.
Crockpot salsa chicken is the ultimate cook once, eat multiple times meal prep. You dump in chicken, salsa and a few spices, walk away for 5 hours, and come back to tender shredded chicken that turns into a different dinner every night.
And if you have kids who don’t do leftovers (I see you), this is your secret weapon. Monday it’s lettuce wraps. Tuesday it’s tacos. Wednesday it’s a burrito bowl. Same chicken, but nobody at the table knows it’s “leftovers.” 😉
It’s keto, it’s family-friendly, and it’s a total time and sanity saver.

Why you’ll love it
- Just 5 ingredients plus salt and pepper
- Hands-off: about 5 minutes of prep, and the crockpot does the rest
- Keto and low carb, about 6g net carbs per serving
- One batch, many meals: wraps, tacos, bowls, salads and more
- Freezer-friendly for future busy nights
Which chicken works best?
- Breasts: lean and classic. Cook on low for 4–5 hours. Don’t go longer or they’ll dry out.
- Thighs: juicier and more forgiving. Cook on low for 5–6 hours. This is my pick if you’re reheating all week.
- A mix of both: the best of both worlds.
- Tenderloins: cook faster. Check them at 3–4 hours on low.
- Frozen chicken: thaw it first. The USDA doesn’t recommend cooking frozen chicken in a slow cooker, because it stays in the unsafe temperature zone too long.

One batch, a week of dinners
Keto ideas: Lettuce cups with avocado, sour cream and shredded cheese or with almond flour tortillas
Cheese taco shells: bake shredded cheddar in circles, then drape them over a spoon to set
Burrito bowls over cauliflower rice
Taco salad with romaine, guacamole and cheese
Stuffed peppers topped with cheese and baked
Breakfast scramble with eggs and pepper jack
Quesadillas with low-carb tortillas
Family swap (not keto): serve the same chicken in tortillas or taco shells, over rice for burrito bowls, or on nachos.

FAQ
Is salsa keto?
Most jarred salsas are low in carbs, about 2–3g net per 2 tablespoons. Skip the sweetened or “fruit” salsas.
Can I cook it on high?
Yes, 2.5–3 hours on high, but low gives you more tender chicken.
Is it spicy?
Only as spicy as your salsa. Use mild for kids, or hot plus a pinch of cayenne for more heat.
Can I double it?
Yes, as long as the crockpot is no more than ⅔ full. The cook time stays about the same.
Final Thoughts
Busy weeks don’t have to mean drive-thru dinners. Toss this salsa chicken in the crockpot, walk away, and come back to dinner (and lunch, and maybe tomorrow’s tacos too). Give yourself a little grace. You’re doing better than you think. 💛
