So when my keto pumpkin bars got me hooked on all things pumpkin spice this fall, I wondered: could I turn that flavor into a 2-minute breakfast mug cake packed with protein? Two eggs, a scoop of collagen and some almond flour later, the answer was yes. And it stopped the hot dog requests cold.

Let’s be honest: most of us have handed our kids a bowl of cereal or swung through the McDonald’s drive-thru on a crazy morning. I’ve done it too. But one cup of Honey Nut Cheerios has 12 grams of sugar and just 3 grams of protein, before you even add milk. McDonald’s Hotcakes come with 45 grams of sugar.
This pumpkin mug cake has more protein than three eggs, almost no carbs and no added sugar, and it’s ready faster than the drive-thru line. My son eats it because it tastes like dessert. I feel good about it because it keeps him full until lunch.

Ingredients You’ll Need
- Canned pumpkin puree (not pumpkin pie filling, which has sugar)
- Almond flour
- Unflavored collagen
- Butter
- 2 eggs
- Golden erythritol (or regular erythritol, powdered)
- Baking powder
- Cinnamon, nutmeg and cardamom
Easy Swaps
- No collagen? Use 1 Tbsp vanilla or unflavored protein powder, or leave it out. You’ll still get about [16]g protein from the eggs and almond flour.
- No cardamom? Use ½ tsp pumpkin pie spice in place of all the spices.
- Dairy-free? Swap the butter for coconut oil.
How to Make a Pumpkin Mug Cake
- Melt the butter in a large microwave-safe mug (at least 12 oz, since it rises!).
- Add the eggs, pumpkin and erythritol. Whisk with a fork until smooth.
- Stir in the almond flour, collagen, baking powder and spices until no dry spots remain.
- Microwave for about 2 minutes, until the top is set and springs back when lightly touched. (Mine took 2 minutes 20 seconds in my over-the-stove microwave. Microwaves vary, so start checking at 1 minute 45 seconds.)
- Let it rest for 1 minute, then eat it from the mug or flip it onto a plate.

- Use a big mug. With two eggs, it puffs up a lot.
- Don’t overcook it. Start checking at 1 minute 45 seconds. Overcooked mug cakes turn rubbery.
- Powder your sweetener in a blender for a few seconds so it isn’t gritty.
- Top it with cream cheese, whipped cream, a pat of butter or a sprinkle of cinnamon.

Can I make this mug cake ahead of time?
It’s best fresh, but you can mix the dry ingredients in a small jar the night before. In the morning, just add the butter, eggs and pumpkin and microwave.
Can I bake it in the oven instead?
Yes! Bake it in a greased oven-safe ramekin at 350°F for about 12–15 minutes, until a toothpick comes out clean.
Is this mug cake good for kids?
My son loves it! It’s high in protein and has no added sugar. If your child is very sensitive to texture, try topping it with whipped cream so it feels like a treat.
Can I use regular sugar instead of erythritol?
You can, but it won’t be keto or sugar-free anymore. If you do, use about 1 tablespoon of brown sugar.
What can I use instead of almond flour?
Coconut flour works, but use only about 2 teaspoons, because it soaks up much more liquid.
