Since my oldest daughter, Savannah, helped me create the classic recipe for Cookie Dough Fat Bombs, it only seems fair to get my 12-year-old Lylah Kate in on the no-bake dessert action, right?
You may remember LK as the girl who lost the Instant Pot – from the Keto Cheeseburger Soup recipe – or you may recognize her from my Facebook page – or you may not know who I’m talking about, and that’s OK too.
Oh, and if you’re keeping track of Savannah’s on-again-off-again relationship with the keto diet – according to her, it is officially back ON.
As a 19-year-old college student, Sav has a love-hate relationship with her body, and according to her as of 11 AM, there is no reason she shouldn’t be a “skinny queen” by June 1.
Here’s the thing that bothers me – well, it’s actually a few things. Now I don’t say this to brag – well – maybe I say this a little to brag, but Sav is in honors college.
She’s never seen anything other than “A” on her report card, but when it comes to taking care of her body – Savannah is clueless. Guess I have the next couple of months to work on her habits, right?
Here’s the thing – I was supposed to post this Cream Cheese Fat Bombs recipe about four months ago, but life got busy, my dog ate my homework, and you know what? I don’t have a good excuse.
It wasn’t until me, and Lylah Kate were in the kitchen a few nights ago with a little downtime that I remembered – out of the blue – Oh My Gosh – Cream Cheese Fat Bombs!
It was one of those rare occasions we had everything we needed. And I bet you have the ingredients in your kitchen right now, too, Which is a good thing because nobody wants to leave the house right now.
What You Need To Make Cream Cheese Fat Bombs Happen
8 Ounces Cream Cheese
¼ Cup Coconut Oil or 4 Ounces Butter
¼ Cup Confectioners Erythritol
1 Teaspoon Vanilla
Quick note – we used *confectioners/powdered erythritol for texture. I haven’t tried these with the granular version, but if that is all you have – I doubt you’d be wasting it if you gave it a try:)
How To Make Cream Cheese Fat Bombs
Yep, this is another super simple one to put together. All you need to do is combine the cream cheese, erythritol, vanilla, and coconut oil.
You will need to melt the coconut oil in the microwave. I started with 30 seconds – checked in – and then heated it for another 20 seconds.
That’s it.
Combine the ingredients in a large bowl using a hand mixer or if you’re fancy a stand mixer. I wouldn’t use a whisk unless you want to be there, whisking your life away.
Next, put the mixture into fat bomb molds or ice cube trays – or if you don’t have any of that, you can use a mini muffin tin or, as LK suggests in the video – scoop little balls out onto a cookie sheet.
Don’t make it complicated
You do need to freeze these for 45 minutes to an hour.
Try to resist the urge to eat it directly from the bowl – but if you do, there’s no judgment here.
I do it all the time. Makes me feel super classy:)
You’ll see in the photos that we did a few different shapes – Lylah Kate enjoys being creative in the kitchen, and I let her. I’ve always let her be herself – as evidenced by the It’s LK footage from years and years ago.
Variations
We topped a few with shredded coconut. You could top with blueberries or strawberries or even nuts if you’re feeling nutty.
