What’s The Deal With Mug Cakes?
In case you’re not familiar with the on-trend mug cake phenomenon, I’ll break it down for you: Mug cakes are perfectly portioned desserts for one are “baked” in the microwave and take a matter of minutes to prepare. They are the ultimate simple no-bake dessert, and What makes them so dang addictive is that once you find the texture that fits your taste buds, you can customize a base mug cake to be any flavor your heart desires.

On A Quest For The Perfect Keto Mug Cake? Here’s The 411
When you ask Google or Pinterest for mug cake recommendations, you’ll find several different methods for making “the best keto mug cake.” Some use almond flour; some use coconut flour – some use both.
This one doesn’t use either one because sometimes you NEED chocolate and you don’t have any almond or coconut flour on hand or the time and energy for a grocery store run, Or, you prefer your cake to taste like, oh, I don’t know CAKE?
Look, don’t get me wrong I’m not knocking almond or coconut flour, but after years of trying different combinations of these go-to keto baking combos, I’ve found I like the texture and consistency of a flour-free mug cake.
See, it turns out you can create a chocolate mug cake that’s rich and decadent without any flour at all. Score.
Keto Chocolate Mug Cake Ingredients
That’s right -you don’t need any almond or coconut flour to make this 4-minute miracle happen. Nope, all you need on hand is the following:
1 tablespoon Unsweetened Cocoa Powder
2 tablespoons Granulated Erythritol (I used So Nourished Use Granulated if you have it – it’s easier to combine – but confectioners also works)
1 tablespoon Heavy Cream
1 tablespoon Melted Salted Butter
1 egg
1/4 teaspoon Vanilla Extract
¼ teaspoon Baking Powder
How To Make Keto Chocolate Mug Cake Step By Easy Step
Here comes the best part – making these little microwave miracles is stupid simple.
Melt the butter in the mug or ramekin in the microwave – this takes my microwave 30 seconds.
Next, mix in the cocoa powder, followed by the erythritol, baking powder, cream, vanilla, and the egg.
Make sure you stir it well so the consistency will be right. Don’t worry; this will only take you a minute.
Note: You may want to grease the mug with butter or a little gluten-free cooking spray if you aren’t planning on eating the cake straight outta the cup 🙂
I microwaved mine for 1 minute + 30 seconds, and it was perfect. It may take your microwave less time, so check-in after a minute, so you don’t overcook it.
If you’re looking for more of a lava cake – adjust the cooking time a little – go for 1 minute + 15 seconds
Tips To Make The Best Mug Cakes
Cooking Times – It’s a good idea to err on the side of caution when it comes to cooking times. All I can speak to is what is going down in my house – it takes 30 seconds to melt one tablespoon of butter and 1 minute, 30 seconds to “bake” this mug cake in my microwave. You may have an older or newer model – our journeys are not the same – I recommend starting with a one minute cook time – you can always add a few seconds.
Mugs Or Ramekins – Are mug cakes better in a ramekin? The way I see it, no. And to suggest that you need to go out and buy anything to make a mug cake would be silly – unless you are feeling fancy in which case – Go. For. It.
The Mug Cake Will Rise – Do not be disappointed when your batter doesn’t fill the mug. You need to leave space for the mixture to rise, or you will be dealing with a mini microwave cleaning crisis, and nobody wants that. I’d go with a 12-ounce mug.
Can You Bake A Mug Cake In The Oven? Yes. If your microwave is taken, broken, or otherwise occupied, by all means, bake it before you go without it! Set your oven to 350 and your timer to 10 minutes.

Mug Cake Toppings
Whipped Cream – One of my favorite ways to top off any chocolate dessert is with my 2-ingredient keto whipped cream recipe. It’s super simple – sugar-free and makes you feel a little bit like Betty Crocker when you serve it.
Sliced Strawberries or Raspberries
Sugar-Free Dark Chocolate Chips – If you’re feeling super chocolatey – top one of these off with a few Lilly’s Chocolate Chips
Sugar-Free Keto Cream Cheese Frosting – Another solid favorite to top off a mug cake is frosting – Keto Frosting. (That was my best James Bond “impression” for those of you reading:)
Mix 4 ounces softened cream cheese with 2.5 tablespoons salted softened butter – then add in ½ cup confectioners erythritol (I love So Nourished) plus a teaspoon vanilla and 1.5 Tablespoons heavy cream. This frosting takes a hot 5 minutes using a handheld mixer, and you can keep it in the fridge for up to 7 days, but I doubt it will last that long:) As for carbs, how does one sound?
