Don’t you hate it when you find a perfect recipe, but you come up one ingredient short? Well, that’s what happened today when I wanted – no, needed – peanut butter balls. All of the recipes I could find called for Lakanto Maple syrup – which unfortunately I did not have. So, I figured I’d make the best out of it and try a swap. And it worked. 

What You Need To Make Keto Peanut Butter Balls 

2 Cups Natural Peanut Butter 

½ Cup Erythritol 

¾ Cup Coconut Flour 

Now before I get in too deep into the details, let’s talk about peanut butter. Not because it’s one of my passions, but because it’s kind of a big deal when your following keto. If you’re not on a low carb diet, or you’ve low key given up counting carbs you won’t give a rip about what I have to say here, but if you are stay tuned.

Here’s the deal: peanut butter can be a healthy part of your low carb and yes, keto diet, as long as it’s the RIGHT KIND. 

You want to choose a natural peanut butter – the fewer the ingredients, the better. Natural peanut butter typically contains around 2-4 net carbs per tablespoon. (The total carbs after you subtract the dietary fiber.)

Ok, now that we’ve covered the peanut butter, let’s talk about how to put these keto peanut butter balls together. 

How To Make Keto Peanut Butter Balls 

Combine ingredients in a food processor or blender. Technically, you could mix by hand, but it will take you a while.

Line a pan with wax paper and then scoop out 40 balls using a mini cookie scoop. If you don’t have one, use a teaspoon. They do not have to look perfect, and chances are they probably won’t. But that’s ok, as long as they’re delicious, right? 

Finally, let these set in the freezer for 30 minutes to an hour. 

Store in the freezer.
