Inspired by Countryside Cravings fabulous recipe for Easy Taco Soup I created this combination – omitting the off-limit keto ingredients (beans & corn) and adding a little more healthy fat.
The result was a fabulously easy dinner recipe that was an instant family favorite.
Lately, I’ve been receiving a lot of emails from y’all, and it’s clear that you need more family-style meals that work for you and your family. And trust me, I get it; nobody wants to cook two dinners! Some days I don’t want to cook one!
This recipe is one everyone at your dinner table-even the picky eaters-will love and with only 3.5 net carbs per bowl, you will love it too! It’s even better the next day, so you may want to cook a double batch for leftovers.
No Slow Cooker? No Problem!
If you’re crunched for time or don’t have a crockpot you can still enjoy this recipe! Just cook it all on the stovetop! It takes around 20 minutes from start to finish!
Is Taco Soup Freezer Friendly?
Another fab reason to love this recipe is you can make it ahead & freeze for later! If you do, hold off on the cream cheese & plan on adding it in when you reheat it.
Just make sure you allow the soup to cool before you freeze. It’s also not a bad idea to label your freezer bag or container with the following info:

Description
This keto taco soup is divine! Ground beef, cream cheese, onion, and Mexican seasonings combine to create an easy keto dinner recipe you can make in your crockpot or slow cooker! With only 3.5 net carbs and 3 WW SmartPoints per serving!
Ingredients
1 Pound Ground Beef or Turkey
1/2 Small Onion – Diced
1 8 Oz Block of Cream Cheese
4 Garlic Cloves – Minced
4 Cups Beef Broth (Bone Broth Recommended)
2 14 Oz Cans Rotel Tomatoes or Diced (Do Not Drain)
4 Oz Green Chiles
2 -3 Tablespoons Homemade Taco Seasoning
Instructions
- Dice Onion
- Brown Ground Beef & Onions over medium-high heat until browned
- Add in Dry Ingredients
- Add in Minced Garlic & cook another 1-2 minutes
- Drain Fat (If Needed)
Stovetop: Add in beef broth & Rotel Tomatoes (Do Not Drain) Simmer for 5 Minutes. Add Cream Cheese & stir. Cook another 5 Minutes! You’re Done!
Crockpot: You CAN put the raw ground beef in the crockpot-just be sure to crumble first. Then add in the rest of the ingredients & cook on low for 4-6 hours. (You can also brown the ground beef with the onions prior to loading into the crockpot!)
