When I started the keto diet twelve years ago, making keto freezer meals was the last thing I had on my mind! I had no idea that prepping my meals ahead and batch cooking ingredients on the weekends would contribute significantly to my weight loss.

That was 150 pounds, and hundreds of meal prep Sundays ago.

When you start a low carb diet like keto, you spend a lot of time learning what you can and cannot eat, reading labels at the store, and calculating macros.

A lot of time.

Which is enough work even if you don’t have a full-time job or a family to feed.

Add in an actual life, plus trying to stay on a budget, and you’ve got a trifecta of reasons to give up before you get started.

This make-ahead breakfast casserole is loaded with sausage, eggs, and cheese – and it’s perfect for feeding a crowd or meal prepping for the week. Make it on Sunday, slice into portions, and have grab-and-go breakfasts ready every morning.

To Freeze: Bake the casserole and let it cool completely. Slice into individual portions, wrap each one in plastic wrap, and store in freezer bags for up to 3 months. Reheat in the microwave for 1-2 minutes.

To Freeze: Make the soup base without the cheese and sour cream toppings. Freeze in portions for up to 3 months. Thaw, reheat, and add the toppings fresh on serving day.

Slow Cooker Stuffed Bell Peppers

To Freeze: Shred the pork and portion into freezer bags with some of the cooking liquid. Freeze for up to 3 months. Thaw and reheat in a skillet, then crisp under the broiler for that perfect texture.

Baked Chicken & Cauliflower Rice

If you’re looking for an easy and inexpensive low carb recipe for lunch or dinner check out this chicken cauliflower rice recipe!
