I first fell in love with creamed spinach when I discovered it as a side dish at one of the Mississippi Delta’s most historic restaurants, Lusco’s. That was before I started doing keto and learned that all creamed spinach recipes are not equal.
See, most old-school creamed spinach recipes call for milk and flour to create the rich and creamy cheese sauce that sets off the spinach. If you’re on a low-carb diet, you know milk and flour are no-gos.
You won’t miss those extra carbs in this keto-creamed spinach recipe! We are sticking with low-carb, simple ingredients: spinach (fresh or frozen), cream cheese, butter, garlic, a little salt and pepper, and a fabulous, crunchy Parmesan and pork rind topping.

Making Keto Creamed Spinach
This easy creamed spinach comes together quickly, but you can do a couple of meal-preppy things ahead to speed it up.
Frozen or Fresh Spinach?
Feel free to use fresh or frozen spinach—whatever you have on hand or is cheaper at the store will work. Don’t hesitate to use frozen spinach: frozen veggies are selected at their peak ripeness and flash-frozen to maintain nutrients.
If you want to speed up prep time, make sure you thaw the spinach before you begin. If you missed that step, you can thaw it in the microwave and put it in a colander to drain. Pat with paper towels to dry; otherwise, you’ll have a watered-down version of creamed spinach!
It’s also a good idea to start with room-temperature (softened) butter and cream cheese, but it’s not a deal breaker if you have to use them straight out of the fridge.
Low Carb Breadcrumbs

Pork rinds are my favorite zero-carb substitute for breadcrumbs. They add texture, flavor, and crunch to this and many other keto casseroles and sides.
You may want to crush the pork rinds beforehand, but that couldn’t be easier. All you need to do is place the pork rinds in a sealed ziplock baggie and crush them. It takes about 2 minutes, tops.

This creamed spinach contains 2.6 net carbs, 4.1 grams of protein, and 22.1 grams of fat per serving.

Ingredients
2 12 Ounce bags of frozen spinach or 2 pounds fresh spinach
4 Tablespoons Butter
3 Garlic Cloves (Minced)
6 Ounces Cream Cheese
4 Tablespoons Grated Parmesan
1 Teaspoon Kosher Salt
1 Teaspoon Black Pepper
2 Tablespoons Crushed Pork Rinds
Optional:
1/4 Cup Chopped Green Onions
1/4 Teaspoon Crushed Red Pepper
Instructions
- Start by de-thawing frozen spinach or rinsing fresh
- Preheat oven to 375°
- Melt butter in a large pan over medium-high heat. Add in garlic & green onions.
- Simmer for 2 minutes then add spinach, cream cheese, & salt & pepper.
- Add in red pepper here if you want a little spice
- Stir & simmer for around 5 minutes
- Transfer to a baking dish.
- Top with Parmesan cheese & pork rinds
- Bake for 10-15 minutes
- Enjoy!
