It’s no secret I love using almond flour. Honestly, almond flour desserts saved my sanity on keto. When I first started following a low-carb diet, I had close to two hundred pounds to lose and no baking experience. I also had gotten into a nasty habit of shamefully binge-eating desserts at night.
When I discovered that the magic of almond flour cookies could satisfy my evil nighttime sugar cravings, I became slightly addicted.
What You Need To Make These Peanut Butter Cookies
You only need eight ingredients to make these keto peanut butter cookies with almond flour. We are talking peanut butter, cream cheese, Swerve Brown, egg, vanilla, almond flour, baking soda, and salt.
Choosing The Right Peanut Butter (On A Low Carb Diet)
Here’s the deal: peanut butter can be a healthy part of your low-carb and, yes, keto diet, as long as it’s the RIGHT KIND.
Your best bet is to choose a natural peanut butter – without the extra sugar. The fewer the ingredients, the better. Natural peanut butter typically contains around 2-4 net carbs per tablespoon.

Variations To Customize These Peanut Butter Cookies
In case you get bored or want to try something new for the holidays, I’ll include a few options for you to make these cookies a little extra special.
Add ½ of a cup of chopped peanuts if you’re feeling nutty.
Need to get your chocolate on? Add ½ cup of sugar-free chocolate or white chocolate chips.
Do you know what I used to do to switch these up and make them look fancy without much effort? Melt the chocolate chips in the microwave and drizzle or dip the cookies into the chocolate! (After baking, of course:)
All you have to do is put your chocolate chips in a microwave-safe bowl with two tablespoons of coconut oil. Check-in on it every 15 seconds and stir – it should take a maximum of a minute.

Can You Make These Ahead & Freeze?
Yes! Scoop out the dough as if you were baking, then place the pan of raw cookie dough in the freezer for 30 minutes to an hour. Then, place the cookie dough balls in a zip-lock freezer bag with the recipe name, baking temperature, and heating instructions—you may need to add a minute or two to the baking time since you’re working with frozen dough.
Tips To Make The Best Keto Peanut Butter Cookies with Almond Flour
Use room-temperature cream cheese. Otherwise, your dough will be harder to form, challenging to cream together, and clumpy.
Use a granulated sweetener for texture. I like using Swerve Brown—I consider it a secret weapon. I haven’t found a better substitute for brown sugar.
Line your pan with parchment paper. You won’t have to worry about the cookies sticking to the tray (Bonus: You can reuse parchment paper.)
Don’t second-guess your dough. Almond flour yields a thicker batter than traditional flour. You may be tempted to add more liquid than the recipe calls for – but hold back. Look at the mixture from my shortbread cookies recipes, and you’ll see what I mean.
Make sure you give cookies time to cool. When it comes to cookies made with almond flour, time improves the texture and form. Almond flour cookies crisp as they cool.
Cookies made with almond flour often appear doughy, especially in the center, so your first instinct may be to leave them in the oven, but they will get crispier as they cool.
Use a cookie scoop. If you want your cookies to be the same size, look fabulous on a dessert tray, etc.

Ingredients
1 cup natural creamy peanut butter
4 ounces cream cheese, softened
3/4 cup Swerve Brown
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
Instructions
Preheat your oven to 350 and line a baking sheet with parchment paper.
Combine 1 cup peanut butter and four ounces of softened cream cheese until smooth using a hand or stand mixer.
Mix in ¾ cups of Swerve Brown, one egg, one teaspoon of vanilla, ½ teaspoon of baking soda, and ½ teaspoon of salt.
Once that’s combined, add the cup of almond flour and blend until the dough is formed.
Use a cookie scoop or tablespoon to form 24 cookies on a cookie tray or baking pan lined with parchment paper (space about an inch apart)
Use a fork to make the cross pattern on top of each cookie.
Bake for 10 to 12 minutes.
