I’d like to take a moment to celebrate the most liberating kitchen appliance of all time-the crockpot.
Slow cooker meals have been saving us all time in the kitchen for decades, and when you’re on the ketogenic diet, you develop a special appreciation for every time-saving meal idea you find.
The Cold Hard Truth
Does anyone have time to spend hours in the kitchen planning and preparing meals? I don’t.
My kitchen strategy is get in and get out.
And yes, the keto diet requires a fair amount of plan & prep, or you risk falling off that brand new shiny fat-burning wagon straight into carbs-ville, but life happens.
So How Do You Avoid Failing?
Well, first you stop worrying about failing and focus on something more productive + then you grab a crockpot. Or two.
I know busy weekends often prevent Sunday meal prep and that’s why I celebrate my slow-cooker meals –often!
You can throw them together quickly, and by the end of the day, you have a healthy, low carb dinner that tastes amazing, and that the majority of your family will love – even if they aren’t following a diet (like mine:))
I’m organizing these recipes for you so they’ll be easy to find later.
I’m listing chicken first – then beef- then moving on to soups. I did my best to include as much variety as possible without going too far into complicated recipe territory!
There’s some of everything here-from good old standby meal prep chicken (for weekends when you do have time to meal prep!) to slow cooker carnitas – AKA: Mexican pulled pork!
