Buffalo Chicken Dip – because the last time I ate Buffalo wings in public, I looked like a baby that had gone face-first into mashed carrots.

Not a good look:)

Moving forward I promise to do more mindful party eating, and come packing wet wipes

Seriously, everybody loves this dip – not just those of us counting carbs! (2.6 net per serving)

Plus – it’s easy to put together – in the crockpot, oven or the microwave.

You can make it ahead or last minute – you’re looking at 35 minutes in the oven & 2-3 hours in the slow cooker!

Chicken – Use leftovers if you have them! Or make it ahead – You can cook a whole chicken in your Instant Pot on meal prep day & shred it – or bake it in the oven – Or – boil 5-6 chicken breasts & shred them – I use a hand mixer to shred chicken fast – Or – you can use a Rotisserie chicken to save time!

Cream Cheese – If you’re prepping ahead – go ahead & set this out to soften – not mandatory

Cheddar – It’s always better to shred a block than use pre-shredded because packaged shredded cheese has a few additives (& carbs)

Monterey Jack – Block is better!

Crumbled Blue Cheese – If you don’t have any good crumbled Blue Cheese you can substitute it with ½ cup Blue Cheese Dressing + ½ Cup Mozzarella. 

Frank’s Hot Sauce – The Original Buffalo Chicken Hot Sauce – (Read More Below) – I used Frank’s, but you can swap it for you have if you need to!

Chopped Celery – Gives it a little crunch – & It only takes a minute to rinse & chop

Green Onions – Green Chiles – Jalapeno Slices – Crumbled Bacon – For Garnish – Optional!

How Buffalo Chicken Became A Thing

The year was 1964 – & Teressa Bellissimo – (owner of Anchor Bar Buffalo, New York) got crafty with chicken wings after her son Dominic asked her for a snack to pass around the bar at midnight.

Either out of frugality or brilliance she grabbed some wings – a part of the chicken that folks were throwing away back then – deep-fried them – covered them in hot sauce – & served ’em up with celery stalks & blue cheese dressing.

They were a hit. Word spread quickly – & that’s how Buffalo Chicken Wings became a thing.

Serving Size & Suggestions

Count on this recipe serving 10 – 12 people – depending on how big the serving spoon is:) If you’re making this dip for a party you may want to double up – you won’t regret it. It’s fabulous with celery (of course) – you may want to try it with Keto chips or pork rinds.

Description

This easy Keto Buffalo Chicken Dip is a fabulous low carb appetizer you can slow cook in the crockpot or bake to perfection with chicken, cream cheese, hot sauce & more cheese. By far the best keto gameday food!


Ingredients

Scale
  • 5 Cups Chicken Breasts or Rotisserie Chicken 
  • 12 Ounces cream cheese
  • 1 Cup Cheddar 
  • 1 Cup Monterey Jack
  • 1 cup crumbled blue cheese + 2 Tablespoons (Separated) 
  • 1/2 Cup Chopped Celery
  • 1 Cup Franks Hot Sauce 
  • Chopped Green Onions – Sliced Jalapenos – Crumbled Bacon – Optional For Garnish 

Instructions

  • Oven Instructions: 
  • Preheat to 375
  • Rinse & chop celery. 
  • Boil chicken & shred it with a hand mixer – or – use diced or shredded rotisserie chicken 
  • Melt the cream cheese until smooth – in a saucepan or the microwave! 
  • Add in the celery, hot sauce, and chicken & stir.
  • Move to your favorite casserole dish 
  • Bake for 25 minutes – sprinkle remaining blue cheese on top  

 

Crockpot/Slow Cooker Instructions: 

  • Combine ingredients & set on Low – 3 hours or High for 60 – 90 Minutes 

Notes

Substitutes: If you don’t have blue cheese crumbles swap ½ Cup Blue Cheese Dressing + ½ cup Mozzarella Cheese 

You can swap Ranch for Blue Cheese dressing.
